Moong Dal Halwa
Moong Dal Halwa is a beloved Indian dessert known for its rich, creamy texture and inviting aroma.
Ingredients:- 1 cup yellow moong dal (split yellow mung beans)
- 3/4 cup sugar (adjust to taste)
- 1 cup ghee (clarified butter)
- 3 cups whole milk or water (milk gives a richer taste)
- 1/4 teaspoon cardamom powder
- A handful of chopped nuts (cashews, almonds, pistachios) for garnish
- Instructions:
- Prepare the Moong Dal:
Rinse the moong dal thoroughly under running water until the water runs clear. Soak the dal in enough water for about 30 minutes. Drain well.
- Roast the Dal:
Heat 1/2 cup ghee in a heavy-bottomed pan or kadhai over medium heat. Add the drained moong dal and roast it, stirring continuously. Roast until the dal turns golden brown and releases a nutty aroma. This step is crucial for flavor and can take about 15-20 minutes.
- Cook the Dal:
Once roasted, add the milk (or water) to the pan carefully. Stir well to avoid lumps. Cook the mixture on medium heat, stirring frequently, until the dal softens completely and the mixture thickens. This can take 15-20 minutes.
- Add Sugar and Cardamom:
Pour in the sugar and cardamom powder. Mix well and cook further, stirring continuously. The sugar will melt and the halwa will start to thicken again. Continue cooking until the mixture starts to leave the sides of the pan and reaches a halwa-like consistency.
- Incorporate Remaining Ghee:
Add the remaining 1/2 cup of ghee gradually while stirring. The ghee will give the halwa a rich, glossy texture.
- Garnish and Serve:
Turn off the heat and garnish with chopped nuts. Serve warm for the best taste.
