Gajar ka Halwa, also known as Carrot Halwa, is a classic North Indian dessert made with fresh carrots, milk, sugar, and ghee. Here’s a delicious and easy-to-follow recipe!
🥕 Ingredients You Need
- Carrots (fresh, red): 1 kg (about 6–8 large carrots)
- Full-fat milk: 1 liter
- Sugar: 3/4 to 1 cup (adjust to taste)
- Ghee (clarified butter): 4 tablespoons
- Cardamom powder: 1/2 teaspoon
- Cashews: 10–12 (chopped)
- Almonds: 10–12 (sliced)
- Raisins: 2 tablespoons
Instructions
- Wash and Grate Carrots
- Wash, peel, and grate the carrots using a grater or food processor.
- Cook Carrots with Milk
- Heat a heavy-bottomed pan or kadhai.
- Add the grated carrots and milk.
- Cook on medium flame, stirring frequently, until the milk reduces and the carrots become soft (about 30–40 minutes).
- Add Sugar & Cardamom
- Stir in the sugar. The mixture will liquefy slightly.
- Keep cooking and stirring until the mixture thickens again.
- Add Ghee & Dry Fruits
- Add the ghee and mix well.
- Add cardamom powder, chopped cashews, almonds, and raisins.
- Continue to cook until the halwa starts leaving the sides of the pan and becomes glossy (about 10–15 minutes)

- 👉 Serve hot with a spoonful of ghee on top

👉 Can be stored in the fridge for 4–5 days and reheated before serving
