Rasgulla is a popular Indian sweet that is loved by people all over the country. It is a spongy and juicy dessert made from curdled milk. Here is a simple recipe to make delicious .

🛒 Ingredients:

1 liter full cream milk
2 tbsp lemon juice or vinegar
1 cup sugar
4 cups water
2–3 cardamom (optional) 
  
👩‍🍳 Step-by-Step Instructions:  

🥛 Step 1: Prepare Chenna (Paneer)

Boil milk in a pan. Lower the flame and add lemon juice. Milk will curdle. Strain using a cloth and wash with cold water to remove sour taste. Hang for 30 minutes to remove excess water. 

🤲 Step 2: Knead the Dough

Take the chenna and mash it well for 8–10 minutes until smooth. Make a soft dough without cracks. Divide into small balls. 

🍯 Step 3: Make Sugar Syrup

In a deep pan, add sugar and water. Bring to a boil. Add chenna balls and cover with a lid. Cook on medium flame for 15 minutes. 

✨ Step 4: Cook & Rest

Rasgullas will double in size. Turn off the flame and let them cool. Rest for 1–2 hours before serving.

💡 Tips for Perfect Rasgulla: 

Always use fresh full cream milk
Knead chenna until smooth (very important)
Balls should be crack-free
Do not overcook or they will become hard  
Garnish with saffron strands, cardamom powder if desired.
